Dried and Frozen Chanterelles
Chanterelles are a difficult mushroom to work dried or frozen. When we prepare them dried we work only with the smallest available, this way when they re hydrate they come back to the perfect whole mushroom size that chef’s demand. You’ll never have to chop them up to fit on the plate, which never looks good on any dish. Only small whole “Cantharellus cibarius” is found in our dried chanterelles, you will never find cantharellus Formosa ( too bitter and peppery) or African Chanterelles ( too sandy) in our product; only pure sweet cantharellus.

When it comes to frozen chanterelles our product is 100% cleaned, blanched and air dried before it is flash frozen; this guarantees a light yellow color with no bitter after taste. They are all small and very uniform – 3-5cm long with a small cap, packed 5 x 1kg bags.
Our dried morchella conica “Morels” are perfect, always free of soil, nothing hidden inside the mushroom and all small from 1” +/-. When chef presents them on the plate they never have to be cut or trimmed to get that look. Also our morels are naturally dried with no “smoked” flavor added, just the pure woodsy flavor. You will notice that the stems are trimmed off so you get 100% usage out of the mushroom. They are packed in 1lb bags and ready to ship to you today.
Our frozen morels are produced the same way and we believe they are better than fresh morels without the waste. They are cleaned, trimmed, sorted by size and ready to toss in the sauté pan. Also packed in 1lb bags.
